Don Gale, owner of Twin Maple SugarWorks, stands near the "piggyback" evaporator inside his sugarhouse near the Green Mountain National Forest, Vt., April 2, 2026. He installed the equipment in 2011 with the help of a USDA Farm Services loan. The evaporator is one of several improvements he has made to the sugaring operation over the years.
