A patron enjoys a meal at the North Carolina National Guard’s JFHQ dining facility, DFAC, March 30, 2016. The DFAC is back in business with the help of the N.C. Department of Public Safety food and nutrition service assistant apprenticeship program. The ten offender-trainees, chosen from a competitive program in the Johnston Correctional Center in Smithfield, dedicate a year towards the apprenticeship, backed by the U.S. Department of Labor and N.C. Department of Commerce. The training by Certified Correctional Food Service staff prepare them for a career in culinary arts.
