Sweet and Simple Acorn Squash
INGREDIENTS:
· 1 acorn squash
· 1 TBSP coconut oil (more if necessary for coating)
· 2 TBSP brown sugar
· 1 tsp cinnamon or apple pie spice
DIRECTIONS
1. Preheat oven to 375 degrees
2. Cut squash in half, remove seeds, and cut into ¾ in pieces. Arrange on aluminum foil lined cookie sheet.
3. Warm coconut oil for 20 seconds in microwave until liquid, and mix in brown sugar and cinnamon.
4. Baste coconut oil mixture over pieces
5. Roast for about 30 minutes or until tender when pierced with a fork
Savory and Simple Acorn Squash
INGREDIENTS:
· 1 acorn squash
· 1 TBSP olive oil
1 tsp minced garlic
· ½ tsp onion powder
· 1 tsp sage or rosemary
· 1/8 tsp salt
· Pinch of white pepper
DIRECTIONS
1. Preheat oven to 375 degrees
2. Combine olive oil, garlic powder, onion powder, and sage
3. Cut squash in half, remove seeds and place on aluminum foil lined cookie sheet with the cut-side up
4. Divide olive oil mixture evenly into both halves
5. Roast for about 1 hr. or until tender when pierced with a fork.
