    ABOARD ARM INDEPENDENCIA (P-163) – Aboard this Mexican Navy ship, members of the crew expressed pride in their culture, especially how they feel about the food produced in the galley during Tradewinds 2015, Phase 2.

    “I just like to cook,” said 3rd Petty Officer and baker, Claudio Mendez Reyes, referring to his panecelos and tutis – Mexican pastries, “It motivates me … and I love bread!”
    Meals aboard the ship often include these sweet pastries as dessert.

    “We have been all over, from the Panama Canal to Norfolk, Virginia, to California for maneuvers,” said 3rd Petty Officer and chief cook, Martin Peloyo Tepoy. “We like our food, we love the Mexican tradition.” He pointed to the freshly ground beef that would soon find its way into a chili taco, as he prepared carrots in the enlisted galley.

    Traditional meals aboard this three-year-old ship regularly include white corn flour tortillas, black beans, refreshing slices of lime and hot salsa picante. For beverages, a flamingo-pink colored, tangy Jamaica flower tea and lots of black coffee are not uncommon at the table.

    “How we are eating here on the ship is how we eat at home in Mexico,” said Cmdr. Antonio Vite Dominguez, a Mexican navy Panther helicopter pilot, over black coffee in the officers’ wardroom. ”This is the kind of food we eat every day.”

    The ship’s leadership is pleased with the ability to bring, literally, a taste of home, to sea.

    “The Independencia is a small piece of Mexico,” boasted Lt. Cmdr. Hugo Bautista the ship’s executive officer. “This really is a microcosm of what you would experience at home.”

    Independencia represented Mexico in this week’s Tradewinds exercise.

    Tradewinds is a combined, joint U.S. Southern Command-sponsored exercise and an opportunity for the participating partner nations to come together to enhance regional maritime security.
