Sweet Potato and Apple Pork Chops
INGREDIENTS:
• 4 Pork Chops (about 3 oz each)
• 1 ½ cups 100% apple juice
• 3 apples
• 2 medium sized sweet potatoes
• ¼ cup water
• 1 tsp cinnamon + a sprinkle
• ¼ tsp orange zest or 1 Tbsp cheddar cheese
DIRECTIONS
1. Place four pork chops (each should be about three oz.) single layered, in a skillet, add 1 1/2 cups of apple juice, cover and begin cooking on medium-high heat for 10 minutes
2. Prepare brown rice according to package directions
3. While the pork chops and rice cook, quickly peel (if desired) three apples and two medium sized sweet potatoes
4. After 10 minutes flip the pork chops, cover and finish cooking over medium heat for about 12 more minutes
5. Cut the peeled apples (less the core) and sweet potatoes into large chunks, place in a microwave safe bowl, add 1 1/4 cup of water, 1 tsp of cinnamon, mix and cover. Cook in microwave on high for five minutes
6. After five minutes, carefully uncover the apples and sweet potatoes, stir (ensure each piece is coated with juices). Re-cover, cook in microwave on high for an additional five minutes
7. Serve one pork chop, on 1/3cup of the rice, topped with a sprinkle of shredded cheddar cheese (if desired or orange zest and black pepper), and 1/4 of the apples and sweet potatoes on each plate
