    FORT HUNTER LIGGETT, Calif. -- Twice a day Soldiers line up in the middle of a dusty field and refuel for the day or the day ahead of them. This refueling point is the chow hall. It's a place where the Soldiers rejuvenate their bodies, get a cold drink, chat with friends and cool off in the air conditioning.

    The food service Soldiers of the 841st Forward Support Company provide this service twice a day that includes meal ready-to-eat distrubution for lunch. Every morning at 0200 hours, men and women rustle out of bed and begin cooking and setting up breakfast and then do it all over again for dinner at 1400.

    "Each night after dinner we prep for breakfast, then we get up at 2 a.m. and start cooking. When we first got here we served close to 1300 soldiers and now we are serving around 0400," said Sgt. 1st Class Eric Rosario, non-commissioned officer in charge of food service.

    Rosario explains that it's a collaborative effort and everyone pitches in. Sgt. Samual Cortez is the non-commissioned officer in charge of water purification. He checks the PH levels and ensures the water is safe for cooking and drinking. Staff Sgt. Humberto Torres, non-commissioned officer in charge of sanitation, is responsible for all waste disposal and cleanup. And Staff Sgt. Tavis Brown is his shift leader.

    The duties of a shift leader include making sure all the parts are working. This includes making sure that all the containerized kitchens are broken down and sanitized, all the mobile burner units are refueled and the staff and food is all accounted for, said Staff Sgt. Brown, shift leader. Also to ensure the foods are stored and cooked at the right temperatures.

    "This is one of the best teams ever," said Rosario. I would go with them anytime, anywhere."
    The focus of this Extended Combat Training is to lead by example, provide excellent training, build moral, and to listen and learn, said Brown.

    "Our mission is to make sure every soldier gets fed with a well-balanced meal," said Rosario.
