    Naval Medical Center Portsmouth’s galley highlighted National Caribbean-American Heritage Month by offering a special lunch, June 29.

    President Donald J. Trump signed the proclamation that June 2018 would be celebrated as National Caribbean-American Heritage Month honoring a long-shared history with our Caribbean neighbors, and to show gratitude to the many Caribbean Americans who are currently serving or have served as members of the Armed Forces.

    “This was my idea because June is Caribbean-American month,” said Culinary Specialist 2nd Class Sade Morris, a native New Yorker whose family is from Barbados.

    Morris said she spoke to other NMCP Sailors from the Caribbean for their food recommendations for the menu. “Red snapper is inspired by Cuba, the jerk chicken was inspired by Jamaica, curry chicken from Barbados, rice and peas from the Virgin Islands, and savory spinach from Haiti,” she explained.

    Also offered was macaroni and cheese, Caribbean cabbage, and butternut squash soup side dishes.

    The featured “Island Desserts” included rum cake, Johnny cake and coconut crème pie. Additionally, a large, beach-themed cake was offered. “It took about four hours to create,” said Culinary Specialist 3rd Class Nicole Drysdale. “It’s a five-layer, yellow cake with vanilla icing, and the topping is a brown sugar crumb to make it look like sand.”

    Morris added that she started working on the menu in mid-June with a specific goal in mind for the meal. “We make great food! We wanted everyone to have the opportunity to taste the flavorful foods from the various islands in the Caribbean,” she said.
