FORT INDIANTOWN GAP, Pa. - Spc. Julia Craig, a resident of Saylorsburg, Pa., serves as a cook for Headquarters and Headquarters Company, 213th Regional Support Group, Pennsylvania Army National Guard.

“My life revolves around food," Craig said. "I even have a food tattoo. Obviously when they said I could go in as a cook that immediately sparked my interest. I thought, ‘Okay. I get to do what I love to do in the military as well.’ So, it’s kind of better for me.”

In her civilian life, Craig is a sous-chef for a French restaurant who also enjoys pastry making. She said she believes cooking is her passion which has always been a part of her life, resulting in her attending culinary schools and even working in successful restaurants.

“I’d say baking is my focus and it started ever since I was a little girl baking with my great grandmother and grandmother," She said. "So, a lot of stuff I taught myself as I grew up.”

What brought this talented cook to the military, according to her, was the ability to do what she loves while having the opportunity to learn new things and have new experiences in her career. Craig says she enjoys both her military and civilian careers because they infuse her overall passion to cook.

“I cook in both the civilian world and the military, so it kind of works,” said Craig. “I learn all different aspects of cooking in regards to both worlds.”

Despite her many interests in her job in both the military and the civilian world, her end goal is clear.

“I want to open my own bakery, kind of like a café; I want to mainly do pastries, breads, and maybe sell some breakfast sandwiches,” she said.

“I want to do everything homemade from scratch: that’s the goal. Give me five to ten years and I’ll be there,” said Craig. “I just want to build up my skills more and more and learn as much as I can.”
